Pumpkin Spice Pancakes with Creamed Honey

Two stacks of golden pumpkin spice pancakes topped with melting creamed honey

Hive Kitchen · Week 1

These pumpkin spice pancakes take 25 minutes and serve 4. Canned pumpkin goes into the batter with 2 tablespoons of Pumpkin Promise pumpkin spice creamed honey. Then another spoonful goes on top of the warm stack and melts into a spiced honey glaze. You don't need syrup or extra spices, since the honey brings both the sweetness and the pumpkin spice.

Welcome to Hive Kitchen, our weekly series of easy recipes made with Barley Moon honey. We're starting with our favorite fall Saturday breakfast.

Pumpkin Spice Pancakes at a glance

Ingredients

  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter, plus more for the griddle
  • ½ cup canned pumpkin purée
  • 2 tbsp Pumpkin Promise creamed honey for the batter, plus more for topping

Instructions

  1. Whisk the flour, baking powder and salt together in one bowl.
  2. In a second bowl, whisk the milk, egg, melted butter, pumpkin and Pumpkin Promise. Stir the wet mixture into the dry ingredients until just combined. Lumps are fine.
  3. Cook ¼-cup scoops on a buttered griddle over medium heat, about 2 minutes per side.
  4. Top with a spoonful of Pumpkin Promise and let it melt over the stack.

Tips for the best stack

  • Don't overmix. Stop stirring as soon as you don't see any dry flour. Overmixing makes pancakes tough.
  • Let the honey blend in. If your creamed honey is firm, whisk it into the warm melted butter first so it mixes smoothly into the batter.
  • Watch the heat. Honey in the batter helps pancakes brown quickly, so keep the griddle at medium and lower it if they darken before the centers set.

Common questions

What is creamed honey, and why use it in pancakes?

Creamed honey (also called whipped honey) is honey that has been whipped into a smooth, spreadable texture. It sweetens the batter, and a spoonful melts over warm pancakes like a honey butter glaze. Pumpkin Promise already has the pumpkin spice flavor, so you don't need to measure out separate spices.

Can I use a different honey?

Yes. Apple of My Hive (apple pie spice) and Cinna-Pear (cinnamon pear) both work as one-to-one swaps. Any of our creamed honeys will sweeten the batter, but the spiced flavors suit this recipe best.

Can I make the pancakes ahead?

Cooked pancakes keep in the refrigerator for a few days. You can also freeze them in a single layer, then stack them with parchment between each one. Reheat them in a toaster or a warm oven, and add the Pumpkin Promise topping right before serving.

Can kids eat these?

Yes, for kids over 1 year old. Don't give any honey to babies under 1, including honey that has been baked or cooked.
